Leftover Potatoes? Try Slow Cooker Potato Soup

Yields: 6-8 servings

Ingredients:

  • 3-4 pounds coarsely chopped potatoes

  • 1/2 pound cooked, chapped bacon or ham

  • 1 small onion, chopped

  • 3 (14 oz.) cans chicken broth

  • 10.75 oz can cream of chicken soup

  • 8 oz package softened cream cheese

  • 1/4 tsp pepper

Preparation:

In a 4 quart slow-cooker, stir together potatoes, bacon (or ham) and onion. In large mixing bowl, combine chicken broth, cream of chicken soup, cream cheese and pepper. Add these contents to the slow cooker, cover, and cook on low for 8-10 hours
